Dutch Apple Pancakes :: Cookin' for One

Cooking for one doesn't have to suck. No indeed. I used gala apples for the recipe shown; nicely sweet and soft after baking. The original recipe calls for one to peel the apples. I don't. For the nutrition and color.

This is great for lunch right out of the oven - hot - and served in a bowl with a little milk.

The next day it's great - again warmed - for 10 minutes @ 300° in the toaster oven. Just enough to take the chill off and crisp the sugar-glazed "crust".

Preheat oven to 400°

3 Grannie Smith Apples - cored & sliced thin, are sautéed 5 minutes over medium high heat in ovenproof pan with:

2T butter
1/4 C sugar
1 t. cinnamon

Mix together to create lovely batter consistency:

3 eggs
1/2C milk
1/2C flour
1 T. sour cream
1/4 t. salt
1 t. grated lemon zest

Bake 25 minutes for golden-brown goodness that makes the house smell like home.

Mom's Friend Pearl :: Embroidery Gender Relations Meditation

Embroidery is not a lost art: a meditation on gender relations.

Pearl recently moved and Mom was hot to see her new space.

Got to meet bunches of Mom's buddies during this last visit as I shuttled her around for visits she doesn't get to easily make.

So good to get to know these fine folks.

Mash-Up of Trash and Text in Art



Just a little bit of inspiration I found at the Armory Center for the Arts. This is a mash-up of two different exhibits. One was an exhibit of trash to art created by high school students and the other was an incorporation of words and text into static and visual art pieces.
